Better Homes and Gardens...Knecht style.


It seems a regular occurrence around here that by the end of the day my girls have "lost" half of their clothes and have some remnant of some meal stuck on their faces. Could even be from breakfast...ya never know. When I look through pictures, Harlow has boogers or food on her face in almost every picture and Gentry is missing a shirt or pants...or both. But, that's how we roll these days.
Now on to the "Better Homes and Gardens" part, which is actually what this post is about! I finally got around to getting some flowers planted. The girls and Alex helped :)





And these cookies are so good. I can't even tell you how much dough I ate. I saw them on the Today Show and decided to try them. A little piece of chocolate heaven (is the name of the cookies not explanatory enough!)

Sugar Dough Chocolate Cookies with Cream
2 sticks butter
2 cups powdered sugar
1.5 T vanilla
2 eggs
~3 cups flour (give or take a little)
4 ounces of cocoa powder
1/2 bag chocolate chips

Cream butter, sugar, and vanilla. Add eggs, one at a time. Sift flour and cocoa together and add into batter in small batches. Fold in chocolate chips. Form into a 12-inch log and wrap in non-stick wrap. Chill until firm, at least 4 hours.
Cut dough into 1/4 inch slices, place on un-greased cookie sheet and bake at 325 for 6-10 minutes.

Cream
1 pint heavy whipping cream
1/4 c mascarpone cheese
1 T sour cream
1/4 c powdered sugar
1.5 tsp vanilla (not in the original recipe, i added it)

Cream all ingredients in a mixer on high speed until stiff peaks form.


Serve cooled cookies with cool cream! So yummy. Other options are serve with fruit (to also dip in the cream), spread vanilla ice cream on one cookie and top with another to make ice cream sandwiches! ENJOY!!!

Em, if only I could send you a sample without it getting nast-o-rama. Oh well, guess you'll have to make a batch of your own!
